Mapo Tofu dumplings are a nod to one of our mother's/grandma's best dishes.  Mapo Tofu is a dish traditionally made with ground pork, tofu, and doubanjiang (broad bean chili sauce).  To ensure that this dumpling is enjoyed by a wider audience, we have made it vegetarian and vegan friendly.  This dumpling is loaded with irresistible umami flavor thanks to caramelized diced mushrooms and roasted eggplant.  The chili here is mild and gives the dumpling just a hint of heat.  We recommend pairing this dumpling with our house Dragon Dance chili oil to tailor the spiciness level to your preference.
